<p class="normal"><i>Non è una problema per me</i> (It&#8217;s not a problem for me). Today, I&#8217;m throwing away the gadgets and having lunch, virtually, with the late, great tenor-of-all-tenors, Luciano Pavarotti. &#8220;The King of the High C&#8217;s&#8221; and I have all the time in the world, just like the length of one his operas.</p>
<p class="normal">In between arias, we&#8217;ll lunch on a simple concoction I&#8217;ve whipped up in the kitchen many times before.</p>

<p class="normal">It&#8217;s a quick-&#8216;n&#8217;-easy, Lazy Person&#8217;s pasta recipe featuring <i>penne rigate</i> (cylinder shaped, furrowed &#8220;quills&#8221;), grilled peperoni (bell peppers) and a handful of Greek black olives, or: <i>Penne con Peperoni e Olive Nero</i>. For lunch, it&#8217;s one of my favorite go-to dishes and plates in less than 30 min., OR YOU DON&#8217;T PAY. Not bad for &#8220;slow food.&#8221;</p>
<p class="normal">More often than not, Italians – of ALL ages – enjoy a plate of pasta at <i>pranzo</i> (lunch) vice <i>cena</i>(dinner). Admittedly, pasta, in all its variety, is one of the heavier dishes of <i>la cucina Italiana</i> and best served as part of the midday meal.</p>
<p class="normal">Whenever I wing it in the galley, I always have music playing in the background, appropriate for the dish I&#8217;m attempting to create or recreate, to keep me focused and in the right mood.</p>

<p>I love the sound of <i>musica classica</i>, and it marries well with the Italian fare that I routinely – and miraculously – whip together.</p>
<p class="normal">With &#8220;The Maestro&#8221; in the house, I thought it appropriate to go with one of his all-time hits, <i><b>Mattinata</b></i>, written by Ruggero Leoncavallo way back in 1904 and one of the 26 songs that made it into the <i><b>Pavarotti&#8217;s Greatest Hits</b></i> CD.</p>
<p class="normal">If you&#8217;ll cue it up on the turntable, I mean the iPhone, and raise the volume to the heavens, we&#8217;ll get this culinary aria underway.</p>

<p class="normal"><b>Step-1</b>: Fill a medium-size pot with water, cover, set the burner to HIGH and bring to a boil.</p>
<p class="normal"><b>Step-2</b>: Cut the pre-packaged roasted peppers and black olives, and peel, quarter and flatten out the cloves of garlic.</p>

<p class="normal"><b>Step-3</b>: Pour the olive oil into a skillet rotating it around until the pan is completely coated. Set the burner on MEDIUM heat and warm the oil for no more than one min. <b>DO NOT BURN THE OIL</b>.</p>
<p class="normal"><b>Step-4</b>: When the olive oil heats up, introduce the garlic (or garlic powder) and stir. Once the garlic cloves turn paper-bag brown, turn the burner off and remove them from the skillet and toss.</p>
<p class="normal"><b>Step-5</b>: Weigh the pasta to ensure you have the right amount (100g x person).</p>
<p class="normal"><b>Step-6</b>: The medium pot of water is now boiling. Remove the lid and add the sea salt.</p>

<p class="normal"><b>Step-7</b>: Drop the dried <i>penne</i> into the boiling water, stir vigorously for about 15 sec. to keep the pieces separated. Set the timer for 9 minutes and let the pasta cook on its own.</p>
<p class="normal"><b>Note</b>: Cooking time for the <i>penne rigate</i> (size n. 73) is 11 min., but we&#8217;ll subtract 1 min. and use that time to quickly sauté the pasta in the sauce at the very end just before plating to ensure the dish is <i>al dente</i>.</p>

<p class="normal"><b>Step-8</b>: While the <i>penne</i> cook, return the skillet to the burner and place on MEDIUM heat. Fold in the roasted pepper and black olives, the optional crushed hot red pepper flakes, and 2 tablespoons of the boiling, salty pasta water and stir for 2 min. Turn the burner down to LOW and keep the sauce going until the <i>penne</i> finish cooking.</p>
<p class="normal"><b>Step-9</b>: The timer rings at the 10-min. mark. The pasta is done. Turn off the burner. Drain the <i>penne</i> in a colander and shake off the excess water.</p>
<p class="normal"><b>Step-10</b>: Throw the <i>penne</i> down into the skillet where the sauce has remained warm. Raise the burner to MEDIUM heat and sauté quickly for about 30-sec., or until all the &#8220;quills&#8221; are bathed in the sauce.</p>

<p>I drove my son-in-law to the hospital today. My daughter was preoccupied helping the kids with their zoom school. The nurses and doctors looked at me quizzically because no one drives his son-in-law to the hospital. Actually, my son-in-law planned to take Uber to the hospital but it was my choice to drive him there. With not much to do, I started drawing my cartoons for this TGIF edition. One of the nurses was curious and so I asked her if she wanted a caricature. I asked her to remove her face mask but she couldn&#8217;t break the rules. It almost felt like I was asking her to undress. So I drew her with her face mask on. She loved it. Another nurse saw what I had done and she had her caricature done as well. It feels so good to be able to gift someone with my art.  I was actually wondering if the <em>new normal</em> would prevent me from doing live caricatures again but today, I see that it is still possible.</p>
<p>On the way to the hospital my son-in-law and I talked about the coming presidential elections. He was confused about who to vote for because he saw disappointed with his choices. So I told him he should look at the accomplishments more than the rhetoric. Many voters have already made up their minds about who NOT to vote for. Many believe things <em>wouldn&#8217;t</em> &#8230; <em>couldn&#8217;t </em>&#8230;  get any worse. Really?</p>
<p>IT CAN GET WORSE<br />
In a previous TGIF edition I mentioned that Abraham Lincoln did the right moral thing (to free the slaves) but was hated by many of his slave-owning constituents. His unpopular decision justified John Wilkes Booth&#8217;s assassination of Lincoln. Mr. Booth and his party believed <strong>anyone BUT Lincoln </strong>would do a better job as president. Do you know who Lincoln&#8217;s Vice President was and who took over the presidential duties? It was <a href="https://en.wikipedia.org/wiki/Andrew_Johnson" target="_blank" rel="noopener noreferrer">Andrew Johnson</a>. He was Black America&#8217;s worst nightmare. He didn&#8217;t want to free the slaves. He tried to block and reverse Lincoln&#8217;s decisions for Black equality. He was so bad he narrowly wiggled his way out of impeachment by just one Senate vote. Johnson is considered by many as one of <a href="https://en.wikipedia.org/wiki/Historical_rankings_of_presidents_of_the_United_States" target="_blank" rel="noopener noreferrer">the worst Presidents of America</a>.</p>
<p>May I suggest something (whether you swing right or left)? Try to be objective about the record of your candidate. Let your candidates accomplishments (or failures) resonate more than the words that come out of their mouths. Don&#8217;t just follow blindly. Observe. If you really do that, then I don&#8217;t really care which way you vote because, either way, you would be voting from an informed viewpoint.</p>
<p>Be safe, be healthy, and remember: Truth doesn&#8217;t always come from a good storyteller.  TGIF people!</p>

<h2><span style="color: #ff0000; font-size: xx-large;">The News Conspiracy</span></h2>
<p>I have a conspiracy theory about the news organizations. Have you ever wondered why there are never-ending intrigues when it comes to politics?</p>
<p>I think I figured it out. Step back from all that noise and you will see there is a strategy in the madness. Follow the money. The media thrives on sensationalism. The more intrigue, the more anger and frustration, the more people hunger for justice &#8230; a sense of justice and a narrative that they shape in our minds.</p>
<p>They sensationalize to sell newspapers, magazines, TV talk shows, Late Night comedy, etc. They did it with the OJ Simpson trials, the terrorist attacks, the Meuller investigation, the Kavanaugh hearings and now they&#8217;re doing it with the impeachment proceedings. The tabloid formula of the National Inquirer works.</p>
<p>What if all this bickering was all an act? I remember a conspiracy theory between Coca Cola and Pepsi where both companies got into advertising wars. The two soft drink giants were always in the spotlight and In the process, all the other soda were forgotten. Do you see the same thing happening in the news?</p>
<p>Of course you know I&#8217;m just kidding. Unfortunately, those media people really hate each other. But you gotta admit that they&#8217;re good at polarizing the citizens and earning a lot in the process.</p>
<p>At least, that&#8217;s how I see it. You&#8217;ve gotta be really stupid or really intelligent to draw different conclusions from the same facts. What do you think?</p>

<h1><span style="color: #ff0000; font-size: xx-large;">Grown Up Christian Wish</span></h1>
<p>A good friend called me yesterday and told me he was in dire financial straits. Another one called and he too was facing dwindling resources. They have been in my thoughts and prayers ever since.</p>
<p>We are in the season of discounts and holiday sales. People are marching out of the malls with their conquests on their shopping carts. But I&#8217;m sure there are many others like my friends who can only watch and wish. The lavish parade of happy shoppers only compounds their misery.</p>
<p>I think of the thousands of Californians who have lost their homes in the recent forest fires. They&#8217;re in a different level of desperation. What will Christmas be like for them?</p>
<p>Moving a scale upwards, I also talked to a fellow entrepreneur who owns 5 convenience store franchises. He said people think he&#8217;s rich but he just gets by. In fact, he isn&#8217;t making any money in one of his branches. Yet one of his employees sued him for the flimsiest of reasons thanks to the encouragement of an opportunistic lawyer. The employee was desperate for cash and thought he was entitled to the owner&#8217;s &#8220;wealth.&#8221; Who do you weep for?</p>
<p>There will always be <em>rich</em> and there will always be <em>poor</em>. Those who are UP will find comfort looking at those who are DOWN &#8230; that is, until they look UP and realize they are actually DOWN. But when they see how unhappy those who are UP really are, then they are content to be where they are. It&#8217;s just human nature to compare. So where is truth? For sure, it isn&#8217;t in emotions that swing its pendulum positively and negatively depending on the time of day. There is a reality &#8230; and it&#8217;s God&#8217;s reality. And His reality is this: We are precious in His sight. Even in times of struggles (for they will surely come) He is there.</p>
<p>Sure, <em>&#8220;God is good and He is aware of our situation&#8221;</em> but lofty declarations like that seem to get lost when the reality of debt stares us in the face. I admit the line where <em>Faith</em> begins isn&#8217;t obvious. But what is obvious is it&#8217;s &#8220;Soul-Searching&#8221; Time. Finances are important but they are still material &#8230; they are temporary. What happens to the soul is eternal. Perhaps God uses these predicaments to draw our focus back to Him &#8212; <em>&#8220;seek ye first the kingdom of God and ALL these things will be added unto you.&#8221;</em> Just because this is hard to grasp doesn&#8217;t mean it isn&#8217;t true. (And I need to remind myself of this all the time.)</p>
<p>We can learn from the apostle Paul&#8217;s letter. He was writing in the midst of his own suffering in prison and he had the &#8220;audacity&#8221; to comfort the Philippian church with these words:</p>
<p><em><span id="en-NIV-29454" class="Phil-4-11 text">&#8220;I am not saying this because I am in need, for I have learned to be content whatever the circumstances.</span> <span id="en-NIV-29455" class="Phil-4-12 text">I know what it is to be in need, and I know what it is to have plenty. I have learned the secret of being content in any and every situation, whether well fed or hungry, whether living in plenty or in want.</span>  <span id="en-NIV-29456" class="Phil-4-13 text">I can do all this through <strong>HIM</strong> who gives me strength.&#8221; </span></em> <span style="font-size: small;">&#8212; Philippians 4:11</span></p>
<p>If you can, please throw a bone &#8230; or even throw a whole turkey &#8230;  to someone in need. It will be a slight inconvenience to you; but to them, it will mean the world. And when we are faced with an impossible situation, it&#8217;s time to call on <strong>Him</strong> &#8212; the solution to the impossibilities of life.</p>
<p>But this is just me.</p>

<p>For some inexplicable reason, when I shared with friends and family that I was going on an exclusive press trip to <strong>Locarno, Switzerland</strong> to cover the film festival and the region in general, none of them had heard of this utterly charming <strong>Italian</strong>-speaking resort located on the northern shore of <strong>Lake Maggiore</strong>, nestled at the foot of the <strong>Alps.</strong>  A hidden gem, <strong>Locarno </strong>is in the <strong>Ticino Canton,</strong> the <strong>Italian-</strong>speaking region of <strong>Switzerland,</strong> and is famous for its sunny climate.  Although its architecture, cuisine, and culture are quite similar to its neighboring <strong>Italy,</strong> <strong>Swiss-Italians </strong>are clear in their distinction between <strong>Italy Italians</strong> vs. the <strong>Italian</strong> speaking <strong>Swiss</strong>, and all that implies.  Other languages spoken in the region include <strong>German,</strong> <strong>French,</strong> and just a smattering of <strong>English.</strong>  Now, back to the beginning of the journey.</p>

<p>My flight began at <strong>LAX </strong>with a connecting flight in <strong>Philadelphia* </strong>to <strong>Zurich.</strong>  All went smoothly until I landed in <strong>Zurich </strong>at which time I went through customs, retrieved my luggage and then had to figure out how to get to the train station, which became a challenge.  I had one large, and I have to admit heavy suitcase, and a small carry on.  I looked at all the signs and frankly became confused as how to find my way to catch the first of three trains.  I finally found a porter and paid him to take me to the train station, which, although connected to the airlines terminal, does take some familiarity with the layout. At last, after what seemed like a circuitous route, he led me to the platform to await the arrival of the first train.  I found a bench and was prepared to sit for over an hour, but a very kind young lady sitting next to me pointed out that I could take the next train, and make the other two connections earlier.  I took her advice and, after changing trains three times, arrived in beautiful <strong>Locarno </strong>much earlier than anticipated.</p>

<p>Armed with a map provided by <strong>Ascona-Locarno</strong> tourism, who were kind enough to host me, following a five-minute walk from the train station, I arrived at the <strong>3-star</strong> <strong>Hotel Garni du Lac.</strong>  The service and hospitality at the hotel was right up there with a <strong>5-star</strong> hotel and although the folks at reception spoke very little <strong>English,</strong> we somehow communicated. I would suggest as a courtesy that you learn a few basic <strong>Italian</strong> phrases.  A lovely buffet breakfast was offered daily and you could either sit inside the cheerful dining room or on the outside patio and gaze at the luscious scenery before you. The hotel is centrally located for easy access to the <strong>Piazza Grande</strong> where most of the <strong>293</strong> films are shown on the largest outdoor screen in <strong>Europe</strong>.   That kind of falls under “good news” “bad news” as it appears that the screenings take place in what could be loosely described as the rainy season with very brief periods of torrential rain almost every night.  Many of the festival attendees came prepared with slickers and umbrellas and most either sat through the pouring rain or took shelter in the arcade until the rain stopped.  Nothing was going to prevent this enthusiastic group of movie lovers from seeing the films.</p>

<p>My wonderful host for this trip was <strong>Lorenza Scamara</strong> who would be my primary guide for the next week.  She met me at the hotel at the exact time we had agreed upon and escorted me to the festival registration desk where I secured my press badge, followed by dinner at a local restaurant.  Smoking is not allowed inside restaurants but smokers can puff away on the patios, which prevented me from enjoying outdoor dining most of the time.</p>
<p>Regarding the cuisine, local chefs have achieved success by re-interpreting the regional cooking of <strong>Lombardy</strong>. More than <strong>15 </strong>of the region’s restaurants boast <strong>Michelin </strong>stars or <strong>Gault-Millau</strong> ratings, and over <strong>20 </strong>are listed in premier gastronomic guides.  <strong>Americans </strong>are accustomed to tipping so it should be noted that a service charge is included in restaurant and hotel bills, as well as taxi fares.  An additional tip is not expected, but is appreciated for good service.  Something interesting is when I asked about an outstanding <strong>Italian </strong>restaurant, I was told there are no <strong>Italian</strong> restaurants in <strong>Locarno</strong> despite the fact that just about every restaurant I saw had an <strong>Italian </strong>name.  I think the phrase must imply something that has to do with its neighboring <strong>Italy,</strong> but clearly it meant something very different from our version of an <strong>Italian</strong> restaurant.</p>

<p>Over dinner,<strong> Lorenza</strong> and I discussed some<strong> Locarno</strong> factoids.  The city has a population of around <strong>15,000</strong> people, and with the warmest, sunniest climate in <strong>Switzerland,</strong> tourism is one of its biggest industries. Toward that end, there is free public transportation and reduced fares are offered for cable cars, ferryboats, and numerous tourist attractions. All guests staying at least one night in a hotel, hostel, or campsite receive a free <strong>Ticino Ticket</strong><strong>,</strong> which cannot be purchased separately and is valid until midnight on the day of departure.  For art lovers, the region boasts <strong>22 </strong>museums, seven theatres, and over <strong>40 </strong>art galleries. The <strong>Ascona-Locarno</strong> <strong>Cultural Pass</strong> allows reduced admission to participating institutions.  You pay full price for the first ticket with a <strong>20%</strong> discount on additional tickets.   With tourism being the major industry, a number of hotels and restaurants close at the end of summer and reopen in the spring.</p>
<p>Now, anyone who knows me is aware that I have a zero sense of direction and in fact I’ve figured out that I’m wired backwards because if where I should go is right, I generally will go left.  Sharing this information with <strong>Lorenza</strong> caused her to be hesitant to leave my side, but after a few times, I actually found my way back to the hotel from the <strong>Piazza Grande,</strong> which was a straight walk through the arcade, where all the shops were decorated with the vibrant yellow and black color scheme of the <strong>72<sup>nd</sup> Locarno Film Festival</strong>. With an estimated <strong>8,000</strong> attendees, during the festival the <strong>Piazza Grande</strong> is transformed into what is said to be the most famous town square in <strong>Switzerland </strong>and the site of the largest open-air cinema in the world.  In between the festival, every <strong>Thursday</strong> the square transforms into a <strong>Farmer’s Market </strong>and becomes a hub for commercial and cultural activities. The oldest historic building in the city is the <strong>14<sup>th</sup> </strong>century <strong>Casa del</strong> <strong>Negromante,</strong> which is now a bar and restaurant and is very popular with locals.</p>

<p>That evening <strong>Lorenza </strong>and I found seats and were looking forward to the world premiere screening of <strong>Spike Lee’s</strong> <strong>“BlacKkKlansman.”</strong> But alas, the skies opened up and there was a torrential downpour.  Many people were prepared with slickers and umbrellas but I was not, so sadly I did not see the film.  But don’t despair, on my way back from <strong>Switzerland,</strong> I stopped in <strong>New York</strong> to celebrate my birthday with family and friends and did see the film, which I absolutely loved.  By this time, it was almost <strong>11:00</strong> pm and since I had been up for over <strong>24</strong> hours, it was time to call it a night.</p>
<p>Regarding the screenings, I should point out that I was unaware that there are indoor theatres to accommodate attendees in case of rain so I’m sad to say that I missed most screenings which included films directed by <strong>Ethan </strong><strong>Hawke, Jane</strong> <strong>Campion, Kent Jones, Aneesh Chaganty, Cristina Gallego, Ciro Guerra, Hong Sangsoo, Vianney Lebasque, Yolande Zauberman, Antoine Fuqua’s </strong>upcoming sequel <strong>“The Equalizer 2</strong><strong>″</strong><strong>,</strong> along with the second season of <strong>Bruno Dumont’s</strong> series <strong>“Coincoin and the Extra Humans.”</strong></p>

<h3>Day 2:</h3>
<p>Following a welcome night’s rest and a satisfying buffet breakfast, <strong>Lorenza </strong>met me in the lobby of the hotel and we were off to explore the <strong>15<sup>th</sup> </strong>century <strong>Santuario della Madonna del Sasso</strong> perched high on a hill overlooking <strong>Locarno</strong>. This cultural center combines art, architecture, history, and spirituality. For centuries pilgrims have made their way to this holy mountain, where the <strong>Virgin Mary</strong> is reported to have miraculously appeared in <strong>1480.</strong>   <strong>Casa del Padre</strong> is an onsite museum housed in the <strong>Capuchin Convent</strong>.  We took a beautiful uphill stroll on the path towards <strong>Orselina</strong> and paused every once in while to take in the beauty of the grounds.  Access to this art-filled holy pilgrimage is by a fun scenic ride up by funicular railway.   I should like to point out how warm and friendly the people are in this region and men actually offer women their seats. While waiting for the funicular, I spotted a woman dressed with the colors of the rainbow.  I told her how striking she looked and asked if I could take her picture and she graciously said yes.  Bearing in mind the thousands of people at the <strong>Film Festival,</strong> there she was that evening and greeted me with a big smile and invited me to sit with her family.</p>

<p>Our next adventure was off to explore <strong>Cardada-Cimetta,</strong> the mountain above <strong>Locarno,</strong> which you reach by taking a cable car from <strong>Orselina</strong> to <strong>Cardada</strong> followed by a chairlift, which takes you up to <strong>Cimetta.</strong>  The summit offers a spectacular <strong>360-</strong>degree panorama view of both one of the lowest points in <strong>Switzerland </strong>&#8211; <strong>Lake Maggiore</strong> – to the highest point &#8211; <strong>Dufour</strong> peak in <strong>Monte Rosa,</strong> as well as some of the bucolic surrounding towns.  This tranquil setting was perfect for a stroll through the shaded woods where we saw small children at play in the <strong>Indian</strong> village.  A sprinkling of lodges and restaurants are available where you can enjoy a typical local dish.  The cable car and chairlift of are open from <strong>March 5th</strong> until <strong>October</strong> <strong>28th</strong> so I would encourage you to start planning next year’s trip now.</p>

<p>Retracing our steps, we headed for lunch at <strong>Restaurant La Fiorentina</strong> and dined on paccheri freschi con pomodoro e mozzarella <strong>Ticinese.</strong>  I’m sure you figured out that it’s a type of pasta with sauce topped with <strong>Ticino</strong> mozzarella. Following lunch we headed back to the <strong>Piazza Grande</strong> area to hear a speech from <strong>Kate Gilmore, </strong><strong>Deputy</strong> <strong>High Commissioner for Human Rights of the United Nations</strong>.  Her topic was the decline of the <strong>Universal Declaration of Human Rights</strong> and sadly the take away was the dire condition of these rights for people around the globe.  Although she didn’t mention <strong>America</strong> by name, she specifically cited <strong>Muslims</strong> and <strong>Latinos</strong> as targeted groups, clearly alluding to the current administration’s draconian immigration policies.</p>
<p>This fabulous day of getting to know the region was coming to an end and following yet another delicious dinner and another aborted attempt to see a film, I headed back to the hotel.</p>

<p>*On your return to the U.S., I would strongly advise you to avoid the Philadelphia airport as your first “port of entry.” It’s a traveler’s nightmare as there’s no conveyer belt to recheck your luggage after going through Customs and my connecting flight to LAX was two terminals away.  Passenger confusion was palpable.</p>

<span style="font-family: Arial, Helvetica, sans-serif; font-size: x-large;"><b><span style="color: #ff0000; font-size: xx-large;">Half-baked Christmas</span></b></span></h1>
<p><strong><span style="font-size: small;">(If you were wondering about last week&#8217;s intro, I was so tired I just stared at the monitor and couldn&#8217;t function. It&#8217;s a miracle I even figured how to send the email. Maybe it was jet lag. Sorry for the confusion.)</span></strong></p>
<p>When I was in Nigeria I was able to attend a roaring, kicking, dancing, shouting Full Gospel Church. A line of singers took turns trumpeting their voices to celebrate Thanksgiving &#8230; wait! &#8212;- <em>Thanksgiving?!?!</em> Although the pilgrims and the Indians were never part of African history, I guess someone thought it was a good idea &#8230; and so they celebrate Thanksgiving in Nigeria.</p>
<p>In Thailand, a predominantly Buddhist country, the 2 years of mourning for their king are over and now Christmas is back in full swing &#8212; giant Christmas trees, toys and festive decorations adorn the streets. In fact, white-skinned Santa Claus and his red-nosed reindeer dance with Christmas carols all over black Africa and yellow Asia. As in Nigeria, someone probably thought it would be a good idea &#8230; and so they also celebrate Christmas.</p>
<p>I think it&#8217;s great &#8212; <em>people making lists, buying special gifts, taking time to be kind to one and all</em> &#8230; it&#8217;s certainly good for the economy. But I am bothered that the significance of the occasion is lost in the merriment. It&#8217;s half-baked Christmas without the special sauce.</p>
<p>Mama Kitchen, our cook in Nigeria, is a Christian. She said she accepted Christ late in life but I needed to explain the whole Gospel to her. Apparently she only got a part of the memo &#8212; similar to what happened to Paul in Acts 19:1-7. I explained that salvation comes from faith in Christ alone and not by doing good works. It&#8217;s not dependent on how good we are but dependent on who HE is. You should have seen the joy in her face when she grasped the concept. (Pardon me if this topic bothers you. I am not trying to proselytize but rather to make a point).</p>
<p>When I go to the mall and see all the joyful faces through the glass windows I wonder if their joy could be a thousand times more if I cleaned their glass of understanding just a little bit more to visualize the full meaning of Christmas.</p>
<p>Two thousand years ago, a child was born/ to revolutionize our understanding of God&#8217;s love/ so that we could pass love on/ in order that no one would perish/ but instead have everlasting life. That one amazing gift from above was THE precursor of all our Christmas gifts! My wish for you, my friend, is that your Christmas will be full like Mama Kitchen&#8217;s.</p>

<p class="normal">My alter ego short-order cook, <b>Lazy Person</b> (LP), a big fan of Carlin&#8217;s by the way, has a metamorphosis of his own going on in the galley involving butterflies of a different sort.</p>
<p class="normal">What LP has captured in his culinary net is what you may know as bow-tie pasta; but here in Italy, where they come from, they&#8217;re known as <i>farfalle</i> (butterflies). And some of the very best you can consume are readily available in the pasta section of your grocery store. They&#8217;re from the pasta house of <b>Garofalo</b>, a landmark brand from Gragnano in the province of Naples, that&#8217;s been making exquisite strands and other shapes – like the <i>farfalle</i> – from <i>semola di grano duro</i> (durum wheat flour) since 1789.</p>

<p class="normal">By adding some frozen baby spring peas and <i>pancetta</i> (bacon) into our pasta-based chrysalis, these golden-yellow butterflies will explode out of their metamorphosis, dripping wet in a very tasty way.</p>
<p class="normal">If you&#8217;ll grab an apron AND a net, we can head into the kitchen and give LP a hand with this fluttering dish. It should take us less that 30 min. to &#8220;capture&#8221; or YOU DON&#8217;T PAY.</p>

<p class="normal">Step-1: Fill a medium size pot with water, cover, fire up to HIGH and bring to a boil.</p>

<p class="normal">Step-2: In a skillet, add the olive oil and butter and fire up to MEDIUM to melt and merge.</p>
<p class="normal">Step-3: Add 2-3 peeled onion sections to the skillet, brown to a paper-bag color then remove.</p>

<p class="normal">Step-4: Add the pancetta to the skillet and let it cook until it browns.</p>

<p class="normal">Step-5: Add the peas and 1/3 glass of white wine to the skillet and continue cooking for 10 min.</p>
<p class="normal">Step-6: Pasta water is now boiling, uncover the pot, add 1 tbsp. of sea salt to the water drop the pasta down. Let it cook for 10 min.</p>

<p class="normal">Step-7: Pasta is now <i>al dente</i>. Drain and place back into the skillet with the peas and pancetta mixture.</p>
<p class="normal">Step-8: Add 2 tbsp. of grated cheese and sauté for 1 min.</p>

<p class="normal">Situated in the village of Kaltern (Caldaro), in the heart of the South Tyrol of Italy&#8217;s northernmost region of the Alto Adige, you&#8217;ll find the small Ritterhof Winery run by the Roner family. One of many wineries that dot the famous Weinstrasse (Wine Road), Ritterhof produces and markets three separate lines of bottled grape: Ritterhof, Crescendo and Kalterer See (Lago di Caldaro). It is the later line&#8217;s namesake blend that we find our wine pairing.</p>
<p class="normal">The <b><i>Kalterer See Weinland DOC</i></b> is a blend of Vernatsch with subtle additions of Lagrein and Pinot Nero. Ruby red to dark garnet in color, this wine has a pleasant, distinct fruity bouquet. On the palate, it&#8217;s dry, mild and harmonious with hints of bitter almonds.</p>
